Waiting For Maple Syrup

With days getting longer, maple syrup producers are getting for the sap to start flowing, but it has to get warmer first.

South Chatham-Kent farmer Don Giffin says it could start soon but there is a lot of snow and ice that's making it difficult for growers to get ready.

"Ice and frost and snow are the biggest issue, most of the buildings where the sugar barns are are frozen up," he says. "The trees are ready, we have to have that back and forth action, minus five, plus five to make the sap flow."

Giffin says there is still a lot of snow around the trees insulating them and he is hoping for a good quality sap run because there hasn't been a lot of freezing and thawing throughout the winter.
