Farmers in Saskatchewan are among those taking part in a program to boost North American organic wheat production.
Denver-based Ardent Mills wants to double organic wheat acres on the continent.
Its program to do that is now running in seven U-S states and in Saskatchewan.
CEO Dan Dye says Ardent continues to see growing demand from restaurants and food companies for organic wheat flour for use in fresh, packaged and menu recipes.
Ardent's VP of Risk Management, Mike Miller, says the company recognizes that there are barriers to growers transitioning to organic.
He says that's why the company's program offers growers direct support services, workshops and long-term contracts for transitional and organic wheat bushels.
