Many Ontario Maple Syrup Producers Not Ready To End Season Yet

There's one group in the province hoping forecasts of a cold snap later this week come true.

Ray Bonenburg of the Ontario Maple Syrup Producers says that would get the sap really running again across the province.

He points out it's only mid-March - and the sugaring season can run well into April.

"Especially the big trees, take a while to thaw out, for the sap to start running up from the root system. Even though you may not have snow on the ground, it doesn't mean that sugaring is over in any way, stretch or form."

He's also seeing no indication of the flushing of the buds in the trees yet.

That brings on an off-flavour in the sap and ends sugaring.

Bonenburg reports producers he's talked are having a pretty good year so far.

"Some of them have made 15 per cent, some 65 per cent, of their crops just depending on where you are, geographically. Flavour is outstanding."

He's still optimistic 2016 will be an average to above-average year for Ontario maple syrup production.
